Just a couple of quotes and correlations of note:

Correlation:
You may or may not know that our processed food supply is LOADED with Manufactured free Glutamates, which, in turn raises our glutamate levels. The most well-known is “MSG”, but there are many, many more.
“According to Dr. Blaylock, the amount of MSG added to the food supply has doubled every decade since the late 1940s.” SOURCE
Conclusion:
If you do a search about any disease of your choice coupled with the phrase “Glutamine/Glutamate” or other variations of this process, you will find an alarming number of associations to an altered glutamate system and the disease.

Good research! And what you found compliments this study from 2013 -- before covid-19. These researchers found that coronavirus infections may alter the "regulation of glutamate release and uptake," leading to excitotoxicity and damage and death of neurons. I wrote to the authors in 2020 and asked if they thought a Covid-19 infection might have the same effects. One wrote back and said yes, Covid-19 "could do the same in neuronal cells that are infected." Glutamate is certainly involved in coronavirus infections. Interesting post, thank you. I found out in 2020 that the industrial monosodium glutamate sometimes uses ammonia in refining process. I surmised that residues of this would cause disease issues due to the excess nitrogen ions. I wrote about this briefly in this post of mine on sodium nitrite.
