Or, as I also like to call it: Migraine in a Box!
So here’s a short piece, and to the point.
Just because something is “Gluten Free” does not mean it’s not bad for you.
The brand doesn’t matter. Look at the ingredients. Here’s the ingredients from a well-known brand of Pasta:
CORN FLOUR, RICE FLOUR, MONO AND DIGLYCERIDES. NO WHEAT INGREDIENTS. PRODUCED ON A DEDICATED GLUTEN FREE LINE.
First question: What is Corn Flour? I don’t see that a lot. This particular brand is from Europe, so I did a little checking. Here’s something I found:

The #2 ingredient, rice flour is made the same way, so will have the same issues as corn flour (corn starch). Call It rice starch. Plus, it contains arsenic.
Mono- and diglycerides are emulsifiers, similar to Lecithin. Soy Lecithin for sure gives me problems. There are many mono and di-glycerides, and they have not told us specifically which ones are in their product, so it’s difficult to know more.
And let’s don’t forget that BOTH of the primary ingredients probably have anti-caking agents in them that are almost never listed on the ingredients labels. Don’t forget my substack piece:

If you like pasta, pick something else. But still read the label.
